I saw this recipe a few months ago, but never had a reason to make them until this weekend. My brother and sister in law were in town and I brought these over for dessert. They were inhaled and they were such a hit that they were requested for my sister's wedding shower in a few months. These are a mixture of sweet, salty, crunchy and creamy...All the best parts of a dessert rolled into one delicious ball.
Chubby Hubby Truffles
Original recipe from Six Sisters' Stuff
1 cup crushed pretzels
1/2 cup crunchy peanut butter
1 Tbsp butter, softened
2 Tbsp brown sugar
3 Tbsp powdered sugar
1 cup chocolate chips
1 Tbsp vegetable oil
Toppings:
1/4 cup crushed pretzels
1/4 cup crunchy peanut butter
1 tsp vegetable oil
1. Mix peanut butter, butter and brown sugar in a bowl until well combined.
2. Stir in pretzel pieces. Then mix in powdered sugar.
3. Using a small cookie scoop, scoop rounded balls onto a wax paper covered cookie sheet. Refrigerate for at least 30 minutes.
4. Remove balls from fridge. Melt chocolate chips and vegetable oil in the microwave for 1 minute, stirring every 30 seconds.
5. Dip balls into chocolate and return them to the wax paper cookie sheet.
6. Melt peanut butter and vegetable oil in microwave for about 30 seconds or until able to be drizzled.
7. Top truffles with pretzel pieces and peanut butter.
8. Return truffles to the refrigerator for at least 30 minutes or until chocolate is set.
9. Store in refrigerator until ready to serve.

Pretzel Bites

More Super Bowl snacks. These were hands down the winner for the most popular snack of the evening. I made 100 of them and they were gobbled up by the 3rd quarter. Very easy, but a little time consuming. Will definitely be making these gems again.
Pretzel Bites
Rhodes dinner rolls (as many as you like, each roll makes 4 bites)
water
1/2 cup baking soda
coarse sea salt
1/4 cup butter, melted
1. Thaw rolls until soft, but still cold and not risen. Cut each roll into 4 pieces. I used kitchen scissors and it worked great.
2. Arrange dough on a greased cookie sheet. Cover with plastic wrap that has been sprayed with cooking spray. Allow to rise until double in size (about 40 minutes).
3. Bring a large pot of water to a boil. Add the baking soda.
4. Drop about 10 bites at a time into the water. Toss gently with a slotted spoon for about 45 seconds. They will puff up slightly. Remove and place on paper towel to drain. Repeat until all bites have been boiled.
5. Place boiled bites on a greased baking sheet. (They will look shriveled, they will puff up in the oven).
6. Bake at 375 degrees for 12-15 minutes or until golden brown.
7. Remove from oven and generously brush with butter. Sprinkle with salt.

Rolo Pretzel Turtles

Another holiday staple for my family. I love adding these to a cookie tray because you can sprinkle them around to fill in gaps. I also like to have a smalll bowl of them out at my house during holiday gatherings because they are a great finger food that guests of all ages enjoy. I usually make a triple batch because they are gobbled up so quickly around here.
Rolo Pretzel Turtles
1 bag Rolo candies, unwrapped
25-30 round pretzels (or any shape small pretzels)
25-30 pecan halves
1. Arrange 10-12 pretzels on a wax paper covered microwave safe plate.
2. Put one Rolo cany in the center of each pretzel.
3. Microwave pretzels and Rolos for 30 seconds, or until Rolos are just melted.
4. Quickly press a pecan on top of each Rolo, flattening it into the pretzel.
5. Repeat with remaining pretzels and Rolos.
5. Allow to cool completely before removing from wax paper.
