Breakfast food is amazing any time of day. I love having a muffin as a snack. I also love sharing breakfast goodies with others. These were sent to work with my husband along with some Snickerdoodle Muffins and all I got back was an empty platter. I also tried to make these healthier by adding some whole wheat flour and substituting some of the oil with applesauce. If whole wheat isn't your thing feel free to use all white flour.
Black and Blue Muffins
1 1/2 cups allpurpose flour
1/2 cup whole wheat flour
3/4 cup sugar
3
tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1
egg
1 cup milk
1/8 cup oil
1/8 cup unsweetened applesauce
3/4 cup blueberries
3/4 cup blackberries
Topping:
2 Tbsp butter
1/4 cup flour
1/4 cup brown sugar
1. Preheat oven to 400 degrees. Generously spray muffin pans with cooking
spray.
2. Combine flour, sugar, baking powder, salt and spices in a
bowl.
3. Make a well in the middle and add wet ingredients to the middle.
Stir with a fork until just combined. Batter will be lumpy.
4. Stir in berries.
5. In a separate bowl use a pastry cutter or fork to cut butter into flour and sugar until it forms pea size balls.
6. Spoon batter
into 12 muffin cups. Sprinkle topping on top of muffins.
7. Bake 15-18 minutes or until a toothpick comes out
clean.

Chocolate Chip Banana Cake Bars

Another awesome use for over ripe bananas! These bars are a cross between banana bread and chocolate chip cookies. It definitely has a more cake-like consistency than banana bread or muffins. It makes a great breakfast or fast snack with a glass of milk. I made a pan of these for work and they were gobbled up quite quickly.
Chocolate Chip Banana Cake
Original Recipe from Onesie Twosie
2 cups flour
2 tsp. baking powder
1/2 tsp salt
3/4 cup butter or margarine
2/3 cup sugar
2/3 cup brown sugar
1 tsp vanilla extract
3 medium sized bananas, mashed
1 large egg
1 1/2 - 2 cups chocolate chips
1. Preheat oven to 350 degrees. Grease a jelly roll pan (or 9x13 pan for thicker bars).
2. Beat butter and both sugars until creamy. Add bananas, vanilla and egg. Mis until smooth.
3. Slowly add flour, baking powder and salt.
4. Stir in chocolate chips.
5. Spread mixture into pan. Optional: Sprinkle top with brown sugar
6. bake 25-30 minutes or until a toothpick comes out clean.

Mixed Berry Breakfast Cake

My husband likes to take baked goodies to work. I love making baked goodies so it works out perfectly. This is probably one of the best coffeecake recipes I have ever tried. It was so good I made it twice in one weekend because I was sad I gave the first one away. It is fluffy, moist, berry perfection. It is absolutely perfect with a cup of coffee. It's the perfect way to start your morning.

Mixed Berry Breakfast Cake
Recipe adapted from Eat Drink Pretty
1 stick butter, softened
1 (8 ounce) package nonfat cream cheese
2 cups sugar
2 eggs
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
1/4 cup milk
2-3 cups fresh or frozen mixed berries, unthawed ( I used blueberries, blackberries and raspberries)
Topping:
1/4 cup sugar
2 tsp ground cinnamon
1. Preheat oven to 350 degrees.
2. In a large mixing bowl cream butter and cream cheese until smooth.
3. Beat in sugar and eggs until fluffy. Add vanilla extract.
4. Sift together flour, salt and baking powder.
5. Slowly add dry mixture to wet, alternating with milk, until just mixed.
6. Stir in berries.
7. Smooth batter into a greased 9x13 pan.
8. Mix cinnamon and sugar. Sprinkle on top of batter.
9. Bake 45-50 minutes or until a toothpick comes out clean. Cool before cutting.

Apple Walnut Bread

I love fall and all of the awesome things that go with it! Apple picking is near the top of my favorite things about fall list. This bread is an awesome way to use some of those apples when you don't feel like an apple pie. It is also relatively healthy. This makes a delicious breakfast or a yummy snack on a fall day. Great for sharing too!

Apple Walnut Bread
Original Recipe from Skinny Taste
1 large apple, peeled and finely diced
1/2 tsp lemon juice
1 tsp agave syrup or honey
1/2 tsp cinnamon
1 1/2 cups applesauce
3/4 cup brown sugar
2 egg whites
2 Tbsp vegetable oil
1 tsp vanilla extract
1 cup all purpose flour
1/2 cup whole wheat flour *or all purpose
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground nutmeg
pinch of salt
1/2 cup chopped walnuts
brown sugar for the topping **optional
1. Preheat oven to 350 degrees.
2. In a small bowl combine apples, lemon juice, agave and 1/2 tsp cinnamon. Toss to coat and set aside.
3. In a large mixing bowl beat egg whites, applesauce, oil, sugar and vanilla until it starts to thicken.
4. Sift together flour, baking soda and remaining spices. Slowly add to wet mixture and mix until just moistened. Don't over mix or your bread will be dense and tough.
5. Fold in apples and walnuts.
6. Pour into a greased 9x5 loaf pan. Sprinkle top with brown sugar.
7. Bake 50-60 minutes or until a toothpick comes out clean. Allow to cool before slicing.

Glazed Chocolate Banana Muffins

I had some bananas in my freezer and they kept falling out every time I opened the door. I decided it was time to use them up. I started browsing Pinterest and stumbled upon some chocolate donut muffins that didn't have any bananas in them, but looked amazing. So then I found some chocolate banana muffins that I thought would be great with glaze on top. I tweaked both recipes and this scrumptious breakfast treat was born. The muffins themselves are relatively healthy. The glaze kinf of ruins that, but you could definitely enjoy these without the glaze. This is a fabulous way to use up those brown bananas!

Glazed Chocolate Banana Muffins
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
1/3 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 5.3 oz container plain or honey Greek yogurt (or about 1/2 cup)
1 egg
4 Tbsp melted butter
3 medium over-ripe bananas, mashed
1 tsp vanilla
3 Tbsp vanilla almond milk (or regular milk)
1 cup chocolate chips **optional
Glaze
2 Tbsp melted butter
1 cup powdered sugar
2-3 Tbsp hot water
1. Preheat oven to 375 degrees. Place paper liners in 12 muffin cups.
2. Sift together flour, sugar, cocoa, salt, baking soda and baking powder and set aside.
3. In a large mixing bowl combine bananas, yogurt, egg, butter, milk and bananas.
4. Slowly add flour mixture and mix until just moist. Do not over mix or your muffins will be dense.
5. Fold in chocolate chips.
6. Fill muffin cups 2/3 of the way full. Bake 18-24 minutes or until toothpick comes out clean.
7. Let muffins cool for about 10 minutes before glazing or it will just soak in.
8. Whisk together all ingredients for the glaze. Dip muffin tops in the glaze and allow to dry before serving. If desired let glaze dry and dip in the glaze again for double glazed muffins. (That's what is pictured)

Snickerdoodle Muffins

I love cooking for other people. Mostly because then I don't have to eat an entire batch of something by myself, but I also like to share delicious treats. I was more than happy to provide breakfast for Albert's coworkers again this week. I decided on muffins. Albert doesn't like fruit or anything out of the ordinary so I decided that cinnamon and sugar was pretty safe. I was right. These were a crowd pleaser and make your house smell awesome!

Whole Wheat Banana Nut Bread

I once again had over ripe bananas on my counter and this time Albert actually came to the rescue with a use for them. He had to go into work early and told his coworkers that I would make them breakfast. He specifically requested banana nut bread because he knew a few of the guys really liked it. Luckily he wasn't home when I actually made this loaf because I made a healthy version. The real test was if the guys noticed anything was amiss and I'm happy to report that I got several rave reviews from the men and no mention of it tasting healthy.
Whole Wheat Banana Nut Bread
1 1/2 cups all purpose flour**
1/2 cup whole wheat flour **note-you can up the amount of wheat flour, just make sure you have 2 cups of flour total
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 cup vegetable oil
1/4 cup applesauce
1 cup sugar
1/2 cup egg substitute (or 2 eggs)
3 ripe bananas, mashed
1 tsp vanilla extract
3 Tbsp skim milk
1/2 cup pecans
pecans and brown sugar for topping (optional)
1. Preheat oven to 350 degrees. Sift flour, baking soda, baking powder and salt. Set aside.
2. In a mixing bowl beat sugar, applesauce and oil. Add egg substitute and mix to combine. Add mashed bananas and vanilla and mix until well combined.
3. Add flour mixture, alternating with milk, starting and ending with dry mixture. Mix until just combined. Stir in pecans.
4. Pour ino a greased 9 x 5 loaf pan. Sprinkle brown sugar an pecans on top, pressing down gently.
5. Bake 50-60 minutes or until a toothpick comes out almost clean.
6. Allow to cool in pan for about 10 minutes, then let cool on a wire rack completely before cutting and serving.
**Hint- If you plan on having this for breakfast, make the loaf right before you go to bed and let it cool overnight. You will have a delicious treat waiting for you in the morning :)

No Bake Granola Bars

Since it is officially summer it is too hot to turn on my oven very often. Because of that I was looking for some no bake recipes. These granola bars are chewy, filling and quite delicious. They are great for breakfast, a snack or even dessert.
No Bake Granola Bars
1 cup rolled oats, I used instant
1 cup shredded coconut
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup chocolate chips
1/2 cup chopped pecans ***optional
1/3 cup honey
1 tsp vanilla
1. Line an 8 x 8 baking dish with parchment paper and spray with cooking spray. This just helps the bars come out of the pan easily. You could skip this step, but you might have trouble getting the bars out in nice pieces.
2. In a mixing bowl combine the peanut butter, vanilla and honey. Stir in oats, coconut, flax, pecans and chocolate chips. **If the mixture seems too dry add a little more honey to bring it together.
3. Press mixture into the pan. Cover and refrigerate at least 1 hour to let it firm up.

Oatmeal Breakfast Bars

I've been on an instant oatmeal streak lately. It fills me up and I like a warm breakfast on chilly mornings. Then I stumbled upon a recipe for peanut butter banana bars on Pinterest. I decided to try it out, but tweaked it a bit to make it healthier and tastier. You really don't taste the peanut butter or banana. I would describe these as a chewy chocolate chip granola bar with a hint of cinnamon. You won't even notice the flax seed, but it adds some extra protien. Don't let the long ingredient list scare you. This recipe is super simple. I don't think you can mess it up.
These bars don't last long at my house. I snack on them throughout the day. They are moist, tasty, healthy and very filling. One serving keeps me full until lunch time. Enjoy!

Whole Wheat Oatmeal Chocolate Chip Muffins

I love muffins. I love all breakfast food. I especially like muffins because they are the perfect size for a snack and you can make so many varieties. This was my first attempt at using whole wheat flour and it was a success. I wouldn't say that they taste "wheaty" so you can trick children or picky husbands into eating something healthy. I also used unsweetened applesauce to lower the fat content. The oatmeal also isn't too overpowering. And chocolate makes everything better. These are great fresh out of the oven and for several days after. Pop them in the microwave to get that fresh baked feeling you crave if you like.
Whole Wheat Chocolate Chip Muffins
Adapted from Teeniecakes
1 cup whole wheat flour
1 cup all purpose flour
1/4 cup rolled oats
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1/4 cup butter, softened
1/4 cup unsweetened applesauce
2 tsp vanilla extract
2/3 c buttermilk
1 cup milk chocolate chips
1 cup semisweet chocolate chips
brown sugar
1. Preheat oven to 350.
2. Cream butter and sugars until fluffy and smooth. Mix in eggs one at a time. Add applesauce, vanilla and buttermilk.
3. In a large bowl sift together flour, salt, baking powder, baking soda and oatmeal.
4. Add the dry mixture to the wet ingredients in 3 batches, mixing before adding more.
5. When the mixture is just combined (don't overmix or it will get tough) stir in chocolate chips.
6. Generously spray 12 muffin cups. Divide mixture between muffin cups and sprinkle tops with brown sugar. Bake 12-15 minutes or until a toothpick comes out clean.
Tips
**If you don't have buttermilk on hand add 1 tsp vinegar to 2/3 c of milk and let sit for 5 minutes before adding to the mixture.

Whole Wheat Chocolate Chip Muffins
Adapted from Teeniecakes
1 cup whole wheat flour
1 cup all purpose flour
1/4 cup rolled oats
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1/4 cup butter, softened
1/4 cup unsweetened applesauce
2 tsp vanilla extract
2/3 c buttermilk
1 cup milk chocolate chips
1 cup semisweet chocolate chips
brown sugar
1. Preheat oven to 350.
2. Cream butter and sugars until fluffy and smooth. Mix in eggs one at a time. Add applesauce, vanilla and buttermilk.
3. In a large bowl sift together flour, salt, baking powder, baking soda and oatmeal.
4. Add the dry mixture to the wet ingredients in 3 batches, mixing before adding more.
5. When the mixture is just combined (don't overmix or it will get tough) stir in chocolate chips.
6. Generously spray 12 muffin cups. Divide mixture between muffin cups and sprinkle tops with brown sugar. Bake 12-15 minutes or until a toothpick comes out clean.
Tips
**If you don't have buttermilk on hand add 1 tsp vinegar to 2/3 c of milk and let sit for 5 minutes before adding to the mixture.

Black and Blue Breakfast Cake

Black and Blue Breakfast Cake
1 stick butter, softened
1 cup sugar
2 eggs
1 tsp vanilla extract
1 tsp lemon zest
3 Tbsp yogurt (plain or vanilla - I used Boston cream pie because I had it on hand)
1/3 cup milk
1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup blackberries, cut into pieces
2/3 cup blueberries
Topping
3 Tbsp butter, softened
1/4 cup flour
1/3 cup brown sugar
1 tsp cinnamon
1/4 tsp groung nutmeg
1. Preheat oven to 350.
2. Cream butter and sugar until light and fluffy. Add eggs one at a time until well blended. Add vanilla, lemon zest and yogurt and mix.
3. Sift flour, baking poowder and salt together. Add four mixture and milk alternately to the batter, ending with the flour mixture. Mix well.
4. Spread batter in a greased 8 inch square pan.
5. Sprinkle berries on top of batter.
6. Mix topping ingredients with a pastry cutter or fork until it forms crumbs. SPrinkle on top of berries.
7. Bake 35-40 minutes or until a toothpick comes out clean.
8. Optional-make a glaze of powdered sugar and milk to drizzle on top.
I love breakfast foods. I would eat them for every meal if it was acceptable. I absolutely love Starbucks, but have to limit myself due to a lack of unlimited funds. Thier blueberry muffins are my favorite treat. I stumbled upon this recipe in the St. Louis Post Dispatch a while ago and it claimed that it tastes just like Starbucks coffee cake. I do have to say it is the closest I have found. I tweaked it a bit and now this is one of my favorite breakfasts. You can make a whole pan for about the price of one muffin at Starbucks, which makes it taste even better :)

Cinnamon Roll Cake

A gooey, delicious cake that can be served as a decadent breakfat or a delicious dessert or even an after school snack. Super easy, but super impressive. Also it fills your house with the aroma of fresh baked cinnamon rolls. Mmmm!
Cinnamon Roll Cake
1 box butter pecan cake mix (yellow would work fine too)
oil, water and eggs to make cake according to box
Filling
1 c butter, softened
1 c packed brown sugar
1 tsp vanilla
1 T cinnamon
1/4 tsp nutmeg
Glaze
1 c powdered sugar
1 tsp vanilla
1-2 T water
1. Preheat oven to 350.
2. Make cake mix according to box direcions. Pour into a greased 9 x13 pan.
3. Mix all ingredients for the filling together until well blended.
4.Drop spoonfuls of filling on top of the cake batter. Use a knife to swirl the filling in the batter.
5. Bake 35-40 minutes or until toothpick comes out clean.
6. Allow cake to cool completely before glazing.
7. Mix all ingredients for glaze together in a bowl. Add water until it is a smooth consistency good for drizzling.
8. Drizzle glaze over the top of the cake.

Mini Donuts

I got some pretty awesome presents this year, but one of my favorites that is definitely going to get a lot of use is my Babycakes Mini Donut Maker. Whip up delicious donuts in a matter of minutes. I'm so excited to use this on one of those days that I really want donuts, but don't want to venture out to get some. These are also much healthier than your average onut because they are not fried. This was my first attempt and they turned out pretty good. I will definitely be experimenting so look forward to new donut recipes soon. This recipe makes 24 mini donuts. I know this sounds like a lot, but since they are small they tend to get gobbled up.
Mini Donuts
1 cup flour
1/2 cup sugar
1 Tbsp baking powder
1 egg
1/2 cup milk
1/2 tsp vanilla
4 Tbsp vegetable oil
Powdered sugar
cinnamon and sugar
Chocolate Glaze
1 cup powdered sugar
1 tbsp cocoa powder
2 Tbsp milk
1. Turn on donut maker to allow it to heat up.
2. Mix dry ingredients in a bowl.
3. Add egg, milk and vanilla and mix unil large lumps are gone.
4. Stir in oil until well blended.
5. Generously coat donut maker with cookig spray.
6. Put batter into a gallon size ziptop bag and seal. Cut off one corner so the batter can flow out.**
7. Fill each donut mold with about 2 T of mixture. Work quickly because the machine is very hot and starts to cook immediately.
8. Close lid and allow donuts to cook for about 5 minutes. (Wait at least 3 minutes before checking on them or the donuts will split in half)
9. Remove from maker to cool.
** My instruction manual recommended using a bag to pour the batter into the molds. It worked well for filling the donuts, but since the batter is quite runny it would leak out between batches. I tried to spoon the batter into the molds and ended up with a mess and donuts without holes. That being said, use the bag to fill your molds, but have a container to rest the bag in so you don't end up with a disaster.**
Topping Options
For powdered sugar or cinnamon and sugar coated donuts:
1. Put sugar mixture of your choice (about 1/2 cup) in a brown paper lunch bag.
2. As soon as donuts are finished cooking, put them in the bag and shake until they are covered.
3. Allow to cool on a wire rack.
For Chocolate Glazed donuts:
1. Mix glaze ingredients until smooth.
2. Allow donuts to cool completely before frosting.
3. Dip donut tops in glaze and allow to dry on a wire rack.

Hashbrown Breakfast Casserole

Add some excitement to your breakfast with an egg and hashbrown casserole. This recipe can serve a crowd and doesn't require constant babysitting if you were making all eggs to order.
Hashbrown Breakfast Casserole
6 eggs (can use egg substitute)
1/2 c sour cream
dash of hot sauce
1/2 tsp seasoned salt
2 T butter
1 T green chiles
3 T white onion, finely chopped
2 cups shredded hashbrown potatoes
4 precooked breakfast sausage links, cup into pieces or 1/4 lb cooked sausage crumbles
2/3 c shredded cheddar cheese
1. Preheat oven to 350 degrees.
2. Generously butter an 8x8 baking dish or an 8-9 inch pie pan.
3. Put butter, onions, green chiles and hashbrowns in a skillet. Cook for 5-10 minutes or until starting to brown.
4. Meanwhile, mix eggs, hot sauce, sour cream and seasoned salt until well combined.
5. Press hashbrown mixture in the bottom and up the sides of baking dish.
6. Sprinkle sausage on top of hasbrowns.
7. Pour egg mixture over sausage.
8. Bake for 30-40 minutes until almost set in the middle and edges are golden.
9. Sprinkle cheese on top and bake for 5 minutes, or until melted.

Brown Sugar Baked Bacon
1/2 lb bacon
3/4 cup brown sugar
1. preheat oven to 350.
2. Line a baking sheet with foil and place a wire rack on top of the foil. Spray rack generously with cooking spray.
3. Put bacon and brown sugar in a gallon size zip top bag. Shake to coat evenly.
4. Arrange bacon in a single layer on the wire rack.
5. Bake for 20-25 minutes or until crisp.
6. Allow to cool slightly before moving to a serving dish or the brown sugar will be too sticky.

Praline French Toast Bake

I recently hosted a girls' brunch at my house with my friends. This week all of the recipes will be brunch inspired. This recipe can feed a crowd and it is prepared the night before and baked in the morning so it would be perfect for Christmas morning. Your house also smells like warm vanilla and cinnamon.
Praline French Toast Bake
1 loaf French bread
8 large eggs (can use egg substitute)
1 cup milk
2 cups vanilla almond milk or whipping cream
2 T sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
2 tsp vanilla
Praline Topping
1 cup butter
1 cup brown sugar
1 cup chopped pecans or walnuts
2 T light corn syrup
3/4 tsp cinnamon
1/4 tsp nutmeg
1. Slice the bread into 1 inch slices and arrange slices in a generously buttered 9 x 13 baking dish.
2. Combine the rest of the ingredients, except praline topping, and beat with a whisk until blended, but not frothy.
3. Pour mixture over the bread, making sure all pieces are covered well.
4. Cover and refrigerate overnight.
5. Make praline topping by heating all ingredients in a saucepan and heating over medium heat. Heat until boiling and boil until the top becomes frothy (about 4-5 minutes).
6, Pour evenly over the top of the bread.
7. Bake uncovered at 350 for 40-50 minutes or until puffed and golden.

Grandma's Blueberry Coffee Cake

This is one of those recipes that reminds me of my childhood. It reminds me of waking up at my grandma's house to the smell of freshly baked breakfast. This is a classic, dense coffee cake with plump, juicy blueberries and a delicious streusel topping, drizzled with vanilla glaze. Breakfast perfection!
You could substitue any type of berries, cherries, fruit that you like.
Grandma's Blueberry Coffee Cake
3 1/3 c flour
1 1/3 c sugar
1 c butter
2 eggs
1 1/2 tsp baking powder
1/2 c milk
1 tsp vanilla
pinch of salt
dash of cinnamon
2 cups blueberries (fresh or frozen)
1 c powdered sugar
1. Preheat oven to 350 degrees.
2. Mix flour, sugar and butter with a pastry cutter until butter is broken up into pea-sized pieces.
3. Remove 1 1/2 cups of mixture and set aside for topping.
4. To the remaining flour mixture add eggs, milk, baking powder, salt, cinnamon and vanilla. Mix well with a hand mixer.
5. Spread batter in a lightly greased jelly roll pan. Top with blueberries. Sprinkle reserved topping on top.
6. Bake for 30 minutes or until lightly browned around edges. Allow to cool completely.
7. Mix powdered sugar with 1 T of water to make a glaze. Drizzle on top of cake.
