BBQ Chicken Salad

Pin It I love BBQ chicken pizza.  If it is on a menu, I will order it.  So when I had some leftover BBQ chicken I was really tempted to make a pizza, but I was short on time and I decided that I could probably make a healthier choice. I decided on a salad.  It has all of the ingredients from a BBQ chicken pizza (minus the crust) with a delicious BBQ ranch dressing.  Healthy, yet satisfying.


BBQ Chicken Salad
1 boneless skinless chicken breast, grilled and basted with BBQ sauce
Romaine lettuce, chopped
Red onion, sliced
Red pepper, diced
shredded cheddar cheese

BBQ Ranch Dressing
2 Tbsp ranch dressing
1 Tbsp BBQ sauce

1. Arrange salad ingredients in a bowl.
2. Mix dressing ingredients together until uniform in color.
3. Pour dressing over salad

Bacon Wrapped BBQ Scallops

Pin It Summer grilling season is in full swing.  I bet I use our grill at least 4 nights a week when the weather is nice.  Tonight I tackled scallops.  These were absolutely amazing.  I definitely regret not making a double batch so I could have leftovers (or just eat 3 helpings for dinner).  We will be having these in the near future for sure.

Bacon Wrapped BBQ Scallops
12 oz scallops - I used small 40-60 count, but feel free to use any size you want (I will probably use larger next time)
8-10 slices of bacon
1/2 cup BBQ sauce of your choice (I used Sweet Baby Ray's Honey BBQ)

6 skewers

1. Lay bacon on a papertowel covered plate and microwave for 2 minutes or until partially cooked.  (You could also partially fry the bacon on the stove, just don't cook it all the way)
2. Wrap bacon around scallops and place on a skewer.  Because my scallops were small I could get 3-4 scallops wrapped with one strip of bacon.
3. Grill skewers for about 1-2 minutes per side, basting with BBQ sauce.
4. Scallops are done when they become opaque.  Bacon will also get crispy.

3 Ingredient Pulled Pork

Pin It Happy Father's Day!  This would be a great meal to enjoy with a crowd.  I love pulled pork and I love the leftovers for the rest of the week too.  I usually use a seasoning packet that you mix with kethcup, vinegar and brown sugar and it is always quite tasty, but I hate all of the extra salt and preservatives in those packets.  I was trying to find a homemade version of the seasoning online, but I couldn't find one that seemed normal enough.  Then I saw that you could use root beer to make tender roasts.  With the success of the Dr. Pepper tacos I decided to give root beer a try.  The verdict: success!  3 ingredients and 2 minutes of prep time equal one amazing meal!

3 Ingredient Pulled Pork
1 bottle BBQ sauce, any variety (I used Sticky Pig)
1 can root beer
1 4-5lb pork butt

1. Place pork in a lined slow cooker.  Pour BBQ sauce and soda over the roast.
2. Cook on low 6-8 hours or until pork falls apart when pulled with a fork.
3. Remove pork from crock pot and shred.  Return pork to liquid before serving.

Perfect Burgers

Pin It Well winter is finally here, blowing winds, frigid temps, icy sidewalks.  My husband and I decided that we needed a little taste of summer to lift our moods.  Albert just got a deep fryer for his birthday ( I hate it), and he wanted to make some fries to test it out so we decided that a summer bbq was in order.  I made these using my grill pan on my stovetop and they turned out awesome, just as good as when grilled outdoors.  This is my go-to burger recipe.  It is fast, flavorful and simple. 


Perfect Burgers
*makes 4 burgers
1 lb ground beef
1 packet onion soup mix
1 tsp seasoned salt

1. Mix all ingredients in a bowl until well combined.
2. Divide into 4 equal portions and form into patties.
3. Grill or cook on stovetop until desired doneness.  We like ours medium well and it takes about 4 minutes per side over high heat.
4. Top with desired toppings
