Beef Broccoli

Pin It I love Chinese food.  I love how quick it is to cook and how amazing the leftovers are for lunch the next day.  I like to try to make it healthier by using reduced sodium soy sauce and loading up on lots of veggies.  This entire meal was finished in less than 30 minutes.  This would be great for a busy weeknight, but your family will be super impressed.

Beef Broccoli
Adapted from Six Sister's Stuff
2 teaspoons vegetable oil
½ teaspoon fresh ginger, minced (or 1/2 tsp ground ginger)
1 tablespoon garlic, chopped
½ cup low sodium soy sauce
½ cup water
¾ cup dark brown sugar
1 tbsp cornstarch

1 lb thinly sliced sirloin or flank steak, sliced into strips
2 cups cooked broccoli, fresh or frozen
cooked rice for serving
green onions, chopped

1. In a large skillet heat oil.  Add garlic and ginger and saute for about 1 minute (watch closely).
2. Add soy sauce and water.  Dissolve brown sugar in the sauce and bring to a boil.  Boil for 2-3 minutes.
3. Dissolve corn starch in 2 Tbsp water and pour into the sauce for the final 30 seconds.  This will help thicken the sauce.  Remove sauce from heat.
4. Cook steak strips in a skillet until cooked through.
5. Add steak and cooked broccoli to the sauce skillet.  Return to low heat until ready to serve.
6. Serve over rice with green onions for garnish.

The Best Kabob Marinade

Pin It Summer is here and that means grilling out all the time.  I love kabobs because you can pretty much put anything on a skewer and cook it up quick.  This marinade is a fmaily recipe that gets passed on to every bride in the family.  You get a cookbook full of family recipes at one of your wedding showers.  I grew up with this recipe and it is amazing!  Impress your friends at your next outdoor bbq!  These would be great for the upcoming 4th of July!

The Best Kabob Marinade
4 Tbsp ketchup
10 tsp soy sauce
2 tsp garlic powder
2 Tbsp Worchestershire sauce
2/3 cup vegetable oil
2 Tbsp white vinegar
1/8 tsp black pepper

3 lbs beef, chicken or pork (I used stew meat)
Veggies of your choice, cut up (I like onions, peppers, mushrooms, zucchini and cherry tomatoes)

1. Mix all marinade ingredients in a large zip top bag. 
2. Add meat and marinate 2-8 hours in the refrigerator.
3. Put meat on skewers with your choice of veggies.
4. Grill 15-20 minutes turning often.

Southwest Dr. Pepper Beef Quinoa Salad

Pin It I had some leftover Dr. Pepper beef and wasn't really in the mood for tacos again.  I bought quinoa for the first time and decided to make a summer lunch salad.  I was a little worried that the quinoa would take forever to cook and would be too grainy and healthy tasting, however, I was pleasantly surprised.  It worked perfect in this salad!  I also had some leftover queso fresco so that got thrown in too.  It's amazing what you can make out of leftovers!

Southwest Dr. Pepper Quinoa Salad
1 cup quinoa, uncooked
1 cup Dr. Pepper beef, with juices
1 avocado, diced
1/2 cup grape tomatoes, halved
1 cup southwest blend frozen veggies, thawed (mixture of black beans, corn, onions and peppers)
1/2 red pepper, diced
juice of 1 lime
1/2 cup queso fresco, crumbled

1. Cook quinoa according to package directions.  Allow to cool before mixing with other ingredients.
2. While quinoa is cooking chop your veggies and add to a bowl with beef and lime juice.
3. When quinoa cools stir in with veggies and top with crumbled cheese.  Refrigerate until ready to serve.

Crock Pot Dr. Pepper Tacos

Pin It Another crock pot gem.  We just got back from a trip to Mexico and had lots of delicious, authentic mexican food.  Now these are in no way authentic, but they are at least a step up from regular ground beef tacos (which I also love).  Don't be fooled by the title, these puppies are SPICY!  Slow cooked beef in a savory, spicy sauce.  These tacos are great with my Mexican beans.


Crock Pot Dr. Pepper Tacos
adapted from The Pioneer Woman
2 lbs beef stew meat or a 2-3 lb roast
1 can Dr. Pepper soda
1/2 white onion, sliced
2 whole chipotles in adobo (adjust amount depending on how spicy you want your meat)
garlic, salt, pepper

1. Season beef liberally with garlic, salt and pepper.  Put meat in a lined crock pot. 
2. Add onions and chipotles.  Pour soda over the top.  Cover and cook 7-8 hours on low or 4-5 on high.  You will know it is done with the meat can be shredded easily.
3. Shred meat and return to juices.  Serve as tacos or burritos with your choice of toppings.

My favorite toppings:
shredded cabbage
peach salsa
queso fresco (mexican crumbly cheese)
sour cream

Crock Pot Philly Cheese Steak

Pin It Albert LOVES Philly Cheese Steak sandwiches.  Whenever we go to a restaurant and they have a version of a cheese steak you can bet money that is what he will order.  I've been wanting to make cheese steaks at home for a while now and I just got this recipe from my mom.  It is incredibly simple and the result is as good as any local deli.  I think I also like this recipe because it allows me to use my crock pot.  You need to do a little bit of prep work involving your oven, but the bulk of the cooking is done in your crock pot.


Crock Pot Philly Cheese Steak
2-3 lb beef tenderloin
garlic salt
pepper
1 can beef broth
1 onion, sliced
1 green pepper, sliced
provelone cheese
hoagie rolls

1. Preheat oven to 325 degrees.
2. Season beef with garlic salt and pepper.  Place in a shallow baking dish and bake for 20 minutes.
3. Allow beef to cool slightly and slice into thin slices.
4. Place sliced beef and beef broth into a crock pot.  Cook on low for 5-6 hours.
5. Just before serving, slice onions and peppers and saute in a little butter for 2-3 minutes, until just golden brown.
6. Serve by slicing hoagie in half and layering beef, onions, peppers and topping with cheese.  I placed my sandwich in a toaster oven for about 3 minutes to melt the cheese.

**I do not like green peppers so I didn't use any for the picture.  You can also add mushrooms if you like.  Feel free to use whatever type of cheese you like the best also.**
