I love fall and all of the awesome things that go with it! Apple picking is near the top of my favorite things about fall list. This bread is an awesome way to use some of those apples when you don't feel like an apple pie. It is also relatively healthy. This makes a delicious breakfast or a yummy snack on a fall day. Great for sharing too!

Apple Walnut Bread
Original Recipe from Skinny Taste
1 large apple, peeled and finely diced
1/2 tsp lemon juice
1 tsp agave syrup or honey
1/2 tsp cinnamon
1 1/2 cups applesauce
3/4 cup brown sugar
2 egg whites
2 Tbsp vegetable oil
1 tsp vanilla extract
1 cup all purpose flour
1/2 cup whole wheat flour *or all purpose
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground nutmeg
pinch of salt
1/2 cup chopped walnuts
brown sugar for the topping **optional
1. Preheat oven to 350 degrees.
2. In a small bowl combine apples, lemon juice, agave and 1/2 tsp cinnamon. Toss to coat and set aside.
3. In a large mixing bowl beat egg whites, applesauce, oil, sugar and vanilla until it starts to thicken.
4. Sift together flour, baking soda and remaining spices. Slowly add to wet mixture and mix until just moistened. Don't over mix or your bread will be dense and tough.
5. Fold in apples and walnuts.
6. Pour into a greased 9x5 loaf pan. Sprinkle top with brown sugar.
7. Bake 50-60 minutes or until a toothpick comes out clean. Allow to cool before slicing.

Snickerdoodle Muffins

I love cooking for other people. Mostly because then I don't have to eat an entire batch of something by myself, but I also like to share delicious treats. I was more than happy to provide breakfast for Albert's coworkers again this week. I decided on muffins. Albert doesn't like fruit or anything out of the ordinary so I decided that cinnamon and sugar was pretty safe. I was right. These were a crowd pleaser and make your house smell awesome!
Snickerdoodle Muffins
* adapted from Food.com
1 1/2 cups allpurpose flour
1/2 cup whole wheat flour
3/4 cup sugar
3 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 egg
1 cup milk
1/8 cup oil
1/8 cup unsweetened applesauce
Topping:
4 Tbsp butter, melted
1/4 cup sugar
1 tbsp cinnamon
1/2 tsp nutmeg
1. Preheat oven to 400 degrees. Generously spray muffin pans with cooking spray.
2. Combine flour, sugar, baking powder, salt and spices in a bowl.
3. Make a well in the middle and add wet ingredients to the middle. Stir with a fork until just combined. Batter will be lumpy.
4. Spoon batter into 12 muffin cups. Bake 15-18 minutes or until a toothpick comes out clean.
5. Allow muffins to cool for about 5 minutes on a wire rack. Meanwhile melt the butter in a small bowl. Combine the sugar and spices in another bowl.
6. Dip the warm muffin tops in the butter and then in the sugar mixture.

Copycat Texas Roadhouse Rolls with Cinnamon Honey Butter

I rate restaurants based on their bread. Texas Roadhouse has one of my favorites mostly because of the awesome cinnamon butter that comes with their piping hot rolls. I stumbled upon a recipe on Pinterest and modified it a bit to make the correct amount for us. This was also my first attempt at making yeast rolls and they turned out perfect. This is definitely a good beginner roll recipe.
1. Mix 1 cup flour, salt, sugar and yeast in a bowl.
2. Combine egg white, water and milk.
3. Make a well in the middle of the flour mixture and pour the milk mixture into the well. Mix by hand until well combined, paying special attention to the bottom and sides of the bowl.
4. Stir in melted butter.
5. Slowly add the remaining 1/2 cup of flour.
6. Cover bowl with saran wrap and let dough rise in a warm place for 45 minutes or until double in size.
7. Punch down dough using cooking spray coated spoons (the dough is super sticky).
8. Spray 10 muffin cups with cooking spray. Divide dough evenly between cups.
9. Cover dough with a damp papertowel and allow dough to rise again for 30 minutes or until double in size.
10. Preheat oven to 400 degrees.
11. Bake rolls for 13-15 minutes or until golden brown. Serve with cinnamon honey butter.
Cinnamon Honey Butter
*enough for 1 batch of rolls - easy to double/triple
1 stick butter, softened
2 T honey
1 tsp cinnamon
1. Combine all ingredients, stirring until smooth and well mixed.
Texas Roadhouse Rolls
*makes 10 rolls

1/2 tsp salt
1 T sugar
1 packet (1/4 oz.) yeast
1 egg white
1/3 c warm water
1/3 cup warm milk
2 T melted butter1. Mix 1 cup flour, salt, sugar and yeast in a bowl.
2. Combine egg white, water and milk.

Cinnamon Roll Cake

A gooey, delicious cake that can be served as a decadent breakfat or a delicious dessert or even an after school snack. Super easy, but super impressive. Also it fills your house with the aroma of fresh baked cinnamon rolls. Mmmm!
Cinnamon Roll Cake
1 box butter pecan cake mix (yellow would work fine too)
oil, water and eggs to make cake according to box
Filling
1 c butter, softened
1 c packed brown sugar
1 tsp vanilla
1 T cinnamon
1/4 tsp nutmeg
Glaze
1 c powdered sugar
1 tsp vanilla
1-2 T water
1. Preheat oven to 350.
2. Make cake mix according to box direcions. Pour into a greased 9 x13 pan.
3. Mix all ingredients for the filling together until well blended.
4.Drop spoonfuls of filling on top of the cake batter. Use a knife to swirl the filling in the batter.
5. Bake 35-40 minutes or until toothpick comes out clean.
6. Allow cake to cool completely before glazing.
7. Mix all ingredients for glaze together in a bowl. Add water until it is a smooth consistency good for drizzling.
8. Drizzle glaze over the top of the cake.

Praline French Toast Bake

I recently hosted a girls' brunch at my house with my friends. This week all of the recipes will be brunch inspired. This recipe can feed a crowd and it is prepared the night before and baked in the morning so it would be perfect for Christmas morning. Your house also smells like warm vanilla and cinnamon.
Praline French Toast Bake
1 loaf French bread
8 large eggs (can use egg substitute)
1 cup milk
2 cups vanilla almond milk or whipping cream
2 T sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
2 tsp vanilla
Praline Topping
1 cup butter
1 cup brown sugar
1 cup chopped pecans or walnuts
2 T light corn syrup
3/4 tsp cinnamon
1/4 tsp nutmeg
1. Slice the bread into 1 inch slices and arrange slices in a generously buttered 9 x 13 baking dish.
2. Combine the rest of the ingredients, except praline topping, and beat with a whisk until blended, but not frothy.
3. Pour mixture over the bread, making sure all pieces are covered well.
4. Cover and refrigerate overnight.
5. Make praline topping by heating all ingredients in a saucepan and heating over medium heat. Heat until boiling and boil until the top becomes frothy (about 4-5 minutes).
6, Pour evenly over the top of the bread.
7. Bake uncovered at 350 for 40-50 minutes or until puffed and golden.
