Snickers Dip

Pin It My friends and I recently had wine and dine night and I was in charge of an appetizer/snack item.  I wanted something sweet, but didn't want something heavy like a baked good.  This dip is to die for!  I was tempted to just eat it by the spoonful, but refrained so that there would be some to actually take with me.  This is definitely a keeper!



Snickers Dip
1 8 oz package cream cheese, softened
2 Tbsp brown sugar
1 8 oz container whipped topping
1 regular size Snickers bar, finely chopped

1. Mix cream cheese and sugar until smooth. 
2. Fold in whipped topping until well mixed.
3. Stir in Snickers.
4. Refrigerate until ready to serve.
5. Serve with pretzels or graham crackers

Snickers Apple Salad

Pin It Who loves no bake desserts???  I do, especially when the temperature has been in the triple digits for over a week.  This 3-ingredient gem is perfect for a potluck, picnic or just for snacking.  It can be whipped together in under 5 minutes and doesn't require time to set in a refrigerator or anything.  What's not to love?

Snickers Apple Salad
6-8 granny smith apples, cubed (leave skin on)
1 tub whipped topping (like Cool Whip)
2 regular size Snickers bars, chopped

1. Mix all ingredients in a large bowl.  Serve immediately or refrigerate until ready to serve.

**Leftovers are good for about 2 days

Oreo Poke Cake (Dirt Cake)

Pin It My husband LOVES dirt cups.  He really is a little kid at heart.  However, I was in charge of dessert for my family and didn't have the time or supplies to make real dirt cups.  This has all of the components of dirt cups, but in a prettier, more grown-up presentation.  Because this cake is served cold it is great for these super hot summer days!


Oreo Poke Cake
inspired by The Country Cook
1 chocolate cake mix (and ingredients to make cake)
1 box Oreo pudding
2 cups milk
1 cup chocolate syrup (like Hershey's)
1 container Cool Whip
1 cup crushed Oreo cookies

1. Bake cake according to box directions.
2. When cake has about 5 minutes left, mix pudding and milk in a bowl.  Allow to sit so it starts to thicken.
3. When cake comes out of the oven, take the handle of a wooden spoon and poke holes about 1 inch apart over the whole cake.
4. Pour chocolate syrup over the cake, pushing it down into the holes.  Pour pudding on next and spread over the top, pushing into the holes.
5. Cover cake and place in the fridge to cool for at least an hour.
6. Take cake out and cover with Cool Whip.  Sprinkle with crushed Oreos just before serving.  If you put the Oreos on too soon they will get soggy.

Strawberry Lime Shortcakes

Pin It Strawberries have been amazing lately.  I wanted to make some sort of dessert that was on the healthy side and wouldn't heat up my house with the oven.  This was the perfect solution.  The tartness of the limes adds a little something extra for your tongue.  I did cheat a little and buy a store bought angel food cake, but sometimes you just need a little help.  Feel free to make your own if you want.


Strawberry Lime Shortcake
**I'm vague on measurements because you can make one or a dozen depending on your crowd
Strawberries, rinsed and sliced
Angel Food Cake, cut into slices
Whipped cream
Juice and zest of one lime *or more if making more than 3-4 desserts
1 tsp honey
toasted coconut (optional)

1. Combine lime juice and honey in a small bowl.  Stir until well mixed.
2. Place one slice of cake in a bowl.  Top with desired amount of berries. 
3. Pour a small amount of lime juice mixture over berries.
4. Top with whipped cream and sprinkle with toasted coconut and lime zest.

Banana Pudding

Pin It I have a habit of buying bananas and not eating them.  It is a texture issue.  I usually end up letting them get over ripe and then making banana bread, muffins or cake.  I'm proud to say that this time I actually bought bananas and used them immediately for this delicious dessert.  I am not a huge fan of raw bananas or overly banana flavored things.  And when I said that I was bringing a banana dessert to Sunday dinner I did not get the most enthusiastic reply.  However, this is a winner!  Simple, (sort of) healthy, no baking required and feeds a crowd.  It is also super versatile.  You could substitute your favorite fruit for the bananas and I'm sure it would be delicious.  I ate some of the leftovers with some fresh strawberries and it was pretty tasty.

Banana Pudding
1 box vanilla wafers
3-4 bananas, sliced
1 box instant vanilla pudding
2 cups milk, I used skim
1 package cream cheese, softened (I used reduced fat)
1 can sweetened condensed milk
1 container whipped topping

1. Line the bottom of a 9 x 13 dish with vanilla wafers.  Top cookies with a layer of bananas.  Save some for the topping.
2. Combine milk and pudding mix.  Whisk until smooth.
3. In a separate bowl beat cream cheese and sweetened condensed milk until smooth.  Stir in pudding mixture and mix until combined.
4. Fold whipped topping into the pudding mixture.  Pout carefully over the bananas and cookies.
5. Top with cookies and remaining bananas.  Refrigerate until ready to serve.  The longer you refrigerate, the softer the cookies will get.

Nutella Fruit Dip

Pin It So you probably noticed the 2 tone fruit dip in the last post.  That's because I was feeling creative and decided to make 2 flavors or dip for a holiday gathering.  My fruit dip recipe is extremely versatile.  You could add any flavor of yogurt, pudding, peanut butter, or anything else delicious you can blend in to the mixture.

Nutella Fruit Dip
1 pkg cream cheese, softened
1/2 c powdered sugar
1/4 c Nutella
1 container whipped topping

1. Mix cream cheese and powdered sugar until smooth and creamy.
2. Stir in Nutella until well blended.
3. Fold in whipped topping.
4. Serve with fruits, cookies and graham crackers.

Crowd Pleasing Fruit Dip

Pin It Albert loves fruit dip.  He would eat it all day if I let him.  I don't mind making it though because then I know he will eat some fruit.  It has now become our go-to item to bring to potlucks and family gatherings because everyone loves it.  Only 3 ingredients and you can easily whip it up in 5 minutes.  Leftovers keep for up to a week in your fridge.


Crowd Pleasing Fruit Dip
1 pkg cream cheese (reduced fat is fine), softened
1/2 cup powdered sugar
1 tub whipped topping

1. Mix cream cheese and powdered sugar until smooth and creamy.
2. Fold in cool whip until well blended.
3. Enjoy on your favorite fruits or graham crackers and cookies.
